Der Stockfisch in \u00d6l und Milch gedunstet, mit ger\u00f6steten Polenta als Beilage,  ist sicherlich die g\u00e4ngiste Zubereitung dieses Fisches in Venetien. Seine Geschichte reicht bis ins 15. Jahrhundert zur\u00fcck, als der Kapitan \u201cQuerini\u201d, Schiffbr\u00fcchiger in Rost (verlassene norwegische Insel), von diesem trockenen Fisch erf\u00e4hrt und ihn mitnimmt auf die R\u00fcckkehr nach Venedig. Dort wurde er als Alternative zum frischen Fisch, der leicht verderblich ist, verwendet, vor allem von den Bewohnern des venezianischen Hinterlandes.<\/p>\n<p>\u201cPoenta e Bacal\u00e0\u201d wurde von einer gewissen Si\u00f2ra Vitoria erfunden, die am Ende des 19. Jahrhunderts eine \u201cTrattoria\u201d (Gasthaus) im Zentrum Vicenzas f\u00fchrte. Diese Trattoria wurde bald zum Vorzeige-Lokal der Zubereitung dieses Gerichtes, welches durch die hochwertigen Zutaten, die gro\u00dfz\u00fcgige Verwendung von \u00d6l und das langsame Kochverfahren gekennzeichnet war.<\/p>\n<p>[\/et_pb_text][\/et_pb_column][et_pb_column type=&#8220;1_2&#8243;][et_pb_text admin_label=&#8220;Non modificare &#8211;
